Food-Friday Recipe: Lemon Herb Salmon

Salmon is easy to prepare, easy to cook, and easy to eat.

To divert your mind away from non-stop updates of Coronavirus, I refuge in cooking. Salmon is my ideal food to get it up and ready in no time.

 Lemon Herbed Salmon

1 whole salmon fillet (cut into 3-4 pieces)

1 tablespoon mayonnaise

1/2 cup chopped parsley

1 clove garlic, peeled & crushed

1 lemon, juice & zest

½ cup stuffed olives (optional)

Salt & Cayenne pepper to taste

 

Directions:

1. Preheat oven to 400 degrees F. Spray the bottom of a baking dish. Set aside.

2. Pat the salmon fillet dry with a paper towel. Cut into desired pieces (the fillet pictured here yielded 5 medium pieces serving 2 adults and 1 child).

3. In a shallow bowl, mix mayonnaise, chopped parsley, crushed garlic, juice of ½ lemon, zest of whole lemon, salt and Cayenne pepper.

4. Rub the paste over salmon fillets. Then add sliced stuffed olives on top, if using any. Arrange the fillets in the baking dish. Place the baking dish on the lower rack and cook the fillets for 10 minutes covered with aluminum foil in the oven. Then remove the foil and broil on low for 5 minutes or until the top turns crispy and gold.

The combination of lemon zest, parsley and garlic eliminates the “fish” odor completely. Serve hot on a bed of rice pilaf with a side of grilled vegetables or creamy mashed potatoes. Or simply enjoy with a hearty salad. Noosh-e jān!
